Thanks to the Slow Food movement, heritage breed
turkeys are making a culinary comeback. Bourbon Red Turkeys,
prized for their rich flavor, were an important commercial variety
through the 1930s and 40s, but declined in popularity as
factory-raised broad breasted varieties took over the market. A
renewed interest in flavorful food has returned this turkey to the
spotlight.
This fall, we'll have a limited number of Bourbon Red turkeys
available in time for your Thanksgiving meal. Grown without
hormones, antibiotics, chemicals or pesticides and raised on
pasture with access to all the natural protein they can catch or
scratch.
